open faced sandwiches

This is actually eggs on toast (and a small watercress salad), but eggs on toast is, technically, an open-faced sandwich. However, I do not want to get technical on your ass right now. Actually, that could be fun, but let's put it aside for the moment and concentrate on sandwiches. What are sandwiches?

According to Woody Allen, an expert on the subject who chronicled the Earl of Sandwich's struggle to invent the sandwich in "Yes, But Can the Steam Engine Do This?," the sandwich is two slices of bread with pastrami between them. However, Mr. Allen married his own daughter, and so everything he says is wrong. Thus, eggs on toast is a sandwich. I am not a Sodomite; thus, I am a sandwich authority. Let's take a look at this little guy:

Another open-faced sandwich, humus with a watercress and shaved red onion salad. A dense, multi-grain loaf made with grains grown in Gill, Massachusetts, this bread by Bread Euphoria is an outstanding platform for the scratch humus I slathered on top of it. Humus, for those of you who don't know, is garbanzo beans, olive oil, sesame paste (tahini), lemon juice, garlic, and salt. It is a simple and delicious recipe. open faced sandwhiches are great, i love sunny side up eggs. write more about vuillard, which reminds me i have a documentary on him i should send you.
