chicken wing tacos

I'm headed to L.A. in about an hour. Paul and Caryn are getting married.  Yipee!  I'll be back on Wednesday with a better understanding of the meaning of life.  In the meantime I'll just have to be satisfied with this partial understanding of life.  Here are some chicken wing tacos.  They're a part of life, too.  And thank god they are!  Cause they're delicious.

  
If you have some left-over chicken from the grill, pull the meat from the bones and pop it into a sauce pan with a little water and a little hot sauce.  Simmer it until the liquid is mostly gone.  Then put the chicken into some steamed tortillas. Note: You can grill chicken for the express purpose of making tacos.  Wings make the best tacos.  Wings are also really cheap.

A quick and easy hot wing marinade can be made by combining ketchup with every hot sauce you have on hand.  I have about nine different hot sauces in my pantry, but if you only have Tabasco, that's fine.  Turn the bottle upside down and squirt some hot sauce into the ketchup.  Taste as you go.  Add some black pepper if you like.  Squeeze a lemon if you want it to be lemony.  Grill the wings on a hot flame.  Char them.  It tastes good.
